但这里的土可不是普通的土,而是黄土高原上的细腻高岭土,当地俗称“观音土”。用简单的配料,面粉、芝麻、花椒、小茴香等调味料揉好醒妥,切成块状或条状,再用当地观音土炒制。这一项“土味面食”,还被纳入了非物质文化遗产!
But this "dirt" is not ordinary soil; it is the fine kaolin from the Loess Plateau, locally known as "Guanyin soil". Using simple ingredients like flour, sesame, Sichuan pepper, and fennel, they knead and let it rest, cut it into pieces or strips, and then stir-fry it with the local Guanyin soil. This "dirt-flavored noodle" dish has even been included in the list of intangible cultural heritage!
